Oatmeal and Fruit Casserole

Happy New Year! Wait, What? Man, where did last month go? We've been enjoying a warmer than normal winter. So far, we've had only a dusting of snow on 2 or 3 different days and only ONE snow day at school on account of a little ice. I saw tiny little leaf buds peeking out on the tree branches and I've heard birds chirping more than once when I wake up in the morning. One would think that it was late March instead of early February. I for one have no problem with an early spring, but I for sure am not counting on anything given that we will live in Mid-Missouri where the forecast can change drastically from morning to noon.

On to more important things... I wanted to share a new recipe I discovered, with Lex's help, back in December. As long as I can remember, whenever I ask Lex what he wants for breakfast, his response is, "Oatmeal, with blueberries and honey." Always. And not the boxed, sweetened kind of oatmeal. Just straight up oatmeal, with blueberries and a drizzle of honey. It's his favorite. Usually, he will eat 2 full bowls. So back in December as I was perusing Pinterest for a new breakfast casserole for Christmas Day, Lex spotted this one over my shoulder and begged me to make it. Since the rest of us are more egg casserole type of people, I made two for our Christmas breakfast feast- our normal egg casserole, and this oatmeal one for Lex. It was sooooo good that it has now made it onto our weekly menu. We have it in our fridge for quick breakfasts and snacks pretty much all the time. It is so easy and so good.


Here are the ingredients, slightly adapted from the original.



2 Cups old-fashioned oats
1/3 cup brown sugar (a sprinkle more for the top is optional)
1 t. baking powder
1 t. cinnamon

1/2 t. salt
1 1/2 cup mixed berries, fresh or frozen
1 egg
3 T. butter, melted
2 T. vanilla extract
1 ripe banana, peeled

Directions:

Preheat the oven to 375 degrees, F. Spray a 9 by 13 baking pan with cooking spray.

In a large bowl, mix the oats, sugar, baking powder, cinnamon, salt, half the berries (the rest will go on top).


In another bowl, stir together the milk, egg, butter, and vanilla. Please pretend there is a picture here to go with this step.

Put the oatmeal mixture in the baking pan, then add remaining berries and banana slices on top.



Pour the milk mixture over entire dish and shake gently to get the milk all the way to the bottom of the pan.


Bake for 35-40 minutes until the oatmeal is set. You can also sprinkle some extra brown sugar on top, although it is plenty delicious without it.


The extra good news about this is that while it is baking, your entire house smells like a giant bowl of cinnamon oatmeal, AND, this keeps amazingly well, so you really can eat on it all week for healthy snacks or breakfasts on the go.
