Cowboy Oatmeal Cookies with Butterscotch


I couldn't resist. I found this recipe at www.kitchme.com and had to try it. I only slightly adapted it from the original. Aside from the large number of ingredients, it's pretty easy to make and they are perfectly chewy, butterscotchy, and sweet. I tend to make drop cookies a little smaller than most people, so I ended up with a little over 5 dozen.


This is one of those recipes that require lots of ingredients. It's probably best to set them all out before you start so you don't have to keep running to the pantry and fridge.

Here's the list of ingredients:


2 cups all-purpose flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup butter, softened
1/2 cup oil
1 cup brown sugar, packed
1 cup white sugar
2 eggs
2 cups quick cooking oats
1 cup butterscotch chips

1.) Start by preheating the oven to 350 degrees.

2.) Sift together flour, baking powder, baking soda, and salt in a medium size bowl.


3.) In a separate bowl, mix butter, oil, and sugars. Beat in eggs.


4.) Mix the butter mixture with the flour mixture until well blended.


5.) Stir in oats and butterscotch chips.



6.) Drop teaspoon size drops onto ungreased cookie sheets.

 
7.) Bake for 10-12 minutes (a baking stone may need 1 or 2 more minutes) or until edges are golden brown.


8.) Remove to cooling rack to cool completely (or indulge while they are still warm and chewy!)
